RUSTIC BERRY CRISP

For the granola:

  1. Preheat oven to 350 degrees F.
  2. Line a large baking sheet with parchment paper.
  3. In a large mixing bowl, combine the oats, nuts, salt and cinnamon and mix together.
  4. Add the oil, honey and vanilla and stir to combine so all the oats are covered.
  5. Pour the granola mixture onto the baking sheet and smooth out to an even layer.
  6. Bake for 25 minutes, stirring halfway through.
  7. Remove from oven and let cool. It will get more crispy as it cools.
  8. Store in an air tight container for 1-2 weeks.

For the berries:

  1. Cut a 12x16 inch rectangle from tin foil and line with parchment paper.
  2. Arrange berries in the center and sprinkle with sugar.
  3. Crumple the foil and cook/grill on medium high heat for 5-7 minutes.
  4. Berries will become very fragrant and may start to burst, depending on the berries you are using.
  5. Remove from grill and let cool slightly.

For serving:

  1. Pour berry mixture into bowls.
  2. Top with homemade granola.

Notes

I used pecans and pumpkin seeds for the granola.

I used strawberries and raspberries for the berries.
