Oysters on the Half Shell with Two Simple Mignonettes

Ingredients
Chilled Cava Mignonette
- 1/2 cup Cava, chilled
- 1/4 cup minced shallot
- 1 tablespoon white wine vinegar
- 1/4 teaspoon ground pepper
- 1/4 teaspoon sugar
- 12 Kumomoto oysters
Sweet and Spicy Lime Mignonette
- 1 lime, juiced
- 1 teaspoon lime zest
- 1/2 teaspoon ginger
- 1 teaspoon white sugar
- 1/2 serrano, finely diced and seeds removed
- 12 Kumomoto oysters
Instructions
- In a small bowl, combine all of the ingredients, except the oysters and mix well.
- Drizzle over the freshly shucked oysters.
