Roasted Sweet Potato Tacos with Avocado Lime Crema

Instructions

  1. Preheat oven to 400 degrees F.
  2. Combine the cubed sweet potatoes, chili powder, olive oil, salt and pepper in a bowl and mix together well. 
  3. Place the sweet potato cubes on a foil lined baking sheet and roast for 20-25 minutes, until the cubes are tender when pierced with a fork.
  4. In a small pot, add the black beans and 1/2 cup of salsa of your choice and stir to combine over medium-low heat. Once slightly warmed, about 5-7 minutes, remove from heat and set aside.
  5. In a small food processor, combine the avocado, dairy-free yogurt, minced garlic and lime juice and blend until smooth and creamy. Add additional lime juice and salt and pepper to taste.
  6. Assemble the tacos with the black beans, sweet potatoes and the garnishes of your choice. 
  7. Top with the avocado lime crema.
