Recipe Notes for Cranberry Salsa
The first time I tried cranberry salsa was over Thanksgiving at a catering company called Catering By Design located in Rochester, MN. They had samples of their food out and I’m always a sucker for free samples. Who isn’t?
I was immediately drawn to the vibrant colors of the salsa. After I tasted it, I knew I wanted to make it at home and share it with you. It’s such a perfect recipe for this time of year since ’tis the season for cranberries. I loved how easily it came together too. I literally threw all of the ingredients into my Vitamix, did a quick blend and it was done. No chopping required.

It’s not as tart as you might think. The lime juice and sugar add a refreshing sweetness and if you’re into a little kick of heat, one jalepeño (seeds removed) does the trick. The hints of cilantro that shine through are probably my favorite part. Since the flavors of this salsa are so well-balanced, it pairs really well with meats and cheeses. The recipe makes quite a bit too, so you could get a bunch of 4 or 8 ounce mason jars and give them away as delicious holiday gifts.
- 1 (12 ounce) bag fresh cranberries
- 1 bunch cilantro
- 1 bunch scallions
- 1 jalapeno, seeded and minced
- 2 limes, juiced
- 1/2 cup sugar
- 1 pinch salt
- Combine all the ingredients in a Vitamix or blender and blend to desired consistency.
- Chill until ready to serve.
